Cream Cheese Mints - cooking recipe

Ingredients
    1 (8 oz.) pkg. cream cheese
    2 Tbsp. half and half
    1/4 c. soft butter
    1 (15 oz.) pkg. white creamy frosting mix
    1 tsp. peppermint extract
    food coloring (as desired)
Preparation
    Soften cream cheese at Medium-high power for about 2 minutes. Add butter and half and half. Microwave for another 45 to 60 seconds at Medium-high to High power until butter is melted. Stir at least once. Add frosting mix. Microwave at High power for about 2 minutes, stirring and whisking until mixture is smooth and creamy. Let stand 2 minutes. Add peppermint extract and food coloring of your choice. Roll mixture into balls or drop by teaspoonfuls onto waxed paper dusted with powdered sugar, if desired. Press with fork for decorated top, if desired. Let mint stand at room temperature for about 4 hours.
