Potato Pancakes - cooking recipe

Ingredients
    2 large potatoes, peeled and shredded
    1 small onion, peeled and shredded
    2 eggs
    2 to 4 Tbsp. milk
    2 Tbsp. butter, melted
    1/4 c. flour
    1/2 tsp. salt
    pepper to taste
Preparation
    Place shredded potatoes and onion in a medium mixing bowl.
    Add eggs, milk and melted butter and blend.
    Then add flour, salt and pepper and mix.
    Place 1/4 cup scoops of mixture onto a hot, greased griddle.
    Spread to make a 4-inch pancake.
    Brown on each side.
    Serve immediately.
    Makes 8 to 10 pancakes.
