Potato-Corn Fritters - cooking recipe

Ingredients
    1 to 1 1/2 c. mashed potatoes or sweet potatoes
    1 can drained corn (save liquid)
    1/4 c. flour
    1 egg
    1 small onion, diced
Preparation
    Mix all ingredients well.
    Add corn liquid with just enough mix to make moderately thick dough.
    Shape into patties.
    Dredge in additional flour.
    Fry until crisp and golden.
    Makes 4 to 6 fritters.
