Pollo Criollo Rapido - cooking recipe

Ingredients
    3 c. cooked rice
    1/2 c. chopped green pepper
    1 medium onion, chopped (about 1/2 c.)
    1/2 c. thinly sliced celery
    1 clove garlic, mashed
    3 Tbsp. butter or margarine
    1 can condensed chicken soup
    1 lb. can tomato wedges with juice, drained
    1 lb. boned chicken, diced
    1/4 tsp. marjoram leaf, crumbled
    1/4 tsp. salt
    4 oz. shredded Queso Mexicano
Preparation
    Place cooked rice in a lightly greased 8-cup baking dish. Saute green pepper, onion, celery and garlic in butter until tender in a large saucepan. Stir in remaining ingredients except cheese. Pour mixture over rice, spreading evenly. Sprinkle with cheese. Cover and bake in moderate oven (350\u00b0) for 30 minutes until bubbly hot. Serves 4.
