3 Cheese Lasagna - cooking recipe

Ingredients
    2 Tbsp. vegetable oil
    1 c. coarsely chopped onion
    1 tsp. minced garlic
    1 (16 oz.) can no salt added or regular tomatoes
    1 (6 oz.) can no salt added or regular tomato paste
    1/4 c. minced fresh parsley
    1 tsp. each dried oregano and basil
    1 (16 oz.) pkg. lasagna noodles
    1 1/2 c. (1%) fat cottage cheese
    1/4 c. grated Parmesan cheese
    2 c. shredded part skim Mozzarella cheese
Preparation
    Heat oil in a medium size saucepan over moderate heat.
    Add the onion and garlic.
    Cook, stirring occasionally, 3 to 5 minutes until onion is translucent.
    Stir in tomatoes (break up with spoon), tomato paste, parsley, oregano, basil and 2 cups water. Reduce heat to low.
    Simmer uncovered, about 25 minutes, stirring occasionally, until slightly thickened.
