Farmer'S Market Vegetable Bowl - cooking recipe

Ingredients
    2 small sweet red peppers
    vegetable cooking spray
    2 tsp. olive oil, divided
    2 c. sliced zucchini
    1 small onion, sliced
    1/2 c. thinly sliced carrots
    2 cloves garlic, crushed
    12 cherry tomatoes, halved
    1 1/2 Tbsp. minced fresh basil
    1 c. frozen egg substitute, thawed
    2/3 c. all-purpose flour
    1/2 c. skim milk
    1/4 tsp. salt
    2 oz. Feta cheese, crumbled
Preparation
    Cut sweet red peppers in half lengthwise; remove and discard seeds and membranes.
    Place pepper, skin side up, on a large baking sheet; flatten with palm of hand.
    Broil 5 1/2 inches from heat 12 minutes or until charred.
    Place peppers in ice water; chill 5 minutes.
    Remove from water; peel and discard skins.
    Cut into thin strips and set aside.
