Confetti Rice - cooking recipe

Ingredients
    2/3 c. green pepper, chopped
    2/3 c. red pepper, chopped
    1/3 c. onion, chopped
    3/4 c. butter
    2 1/2 c. cooked long grained rice
    salt and white pepper to taste
Preparation
    Tear assorted greens such as romaine, endive, butter lettuce and spinach into bite size pieces.
    Put into a glass bowl and toss.
    Serve with honey Dijon dressing.
