Hot Pepper Relish - cooking recipe

Ingredients
    20 red hot peppers, seeded
    20 green hot peppers, seeded
    15 medium onions
    1 tablespoon uniodized salt
    2 1/2 cups vinegar
    2 1/2 cups sugar
Preparation
    Put peppers and pealed onions through food chopper.
    Add salt; cover with boiling water, and let stand 10 minutes.
    Drain liquid and discard.
    Add vinegar and sugar to vegetables, bring to a boil and simmer 20 minutes, ladle into hot canning jars; adjust lids at once, process in boiling water bath (212 degrees f.) for 5 minutes. Remove jars from canner and complete seals.
    Yields 6 pints.
