Sausage-Grits Souffle - cooking recipe

Ingredients
    1 lb. hot sausage
    1 c. quick grits
    6 to 8 eggs, well beaten
    1 1/2 c. milk
    salt and pepper to taste
    1/4 c. margarine
    2 c. grated sharp Cheddar cheese, divided
Preparation
    Stir-fry sausage until cooked and brown.
    Drain well; set aside.
    Cook grits in a large Dutch oven according to package instructions.
    Combine eggs, milk, salt and pepper.
    Slowly stir into grits.
    Add margarine and 1 1/2 cups of cheese, stirring until cheese melts.
    Add sausage; mix well.
    Bake in 3-quart round casserole at 350\u00b0 for 1 to 1 1/2 hours.
    Sprinkle remaining 1/2 cup cheese on top; return to oven just until cheese melts.
    Serves 10 to 12.
