Deep South Beans - cooking recipe
Ingredients

3 cans pinto or white beans
1 large fresh tomato
1 small onion
1 bell pepper
2 c. grated sharp Cheddar cheese
jalapeno peppers (optional)
1 pkg. powdered taco seasoning
Preparation

Cube tomato.
Section onion.
Deseed and cut bell pepper into small cubes.
Mix beans, tomato, onion and bell pepper with taco seasoning and bake in large casserole dish.
Garnish top with jalapeno peppers and cheese.
(Some cheese may also be mixed with the beans).
Bake at 375\u00b0 to 400\u00b0 for 30 to 45 minutes.
Serve as entree with Corn Fritters and other vegetables.
Serves 8.
