Potato And Cheese Bake - cooking recipe

Ingredients
    10 all-purpose red or white potatoes, cooked, peeled and diced
    1 chopped onion
    1 chopped green bell pepper
    8 oz. diced Velveeta cheese
    salt and pepper
    2 bread slices, toasted and cubed
    1 1/2 c. milk
    1/2 c. butter
    1 1/2 c. crushed cornflakes
Preparation
    Gently mix the diced cooked potatoes with the chopped onion, bell pepper, diced Velveeta, salt and pepper.
    Place in a large casserole.
    Have oven heating to 325\u00b0.
    In a saucepan, heat bread with milk and butter until blended.
    Pour into the baking dish. Top with cornflake crumbs and bake, uncovered, for 45 minutes or more.
    Yields 8 servings.
