Tomatoes Stuffed With Tuna Fish - cooking recipe

Ingredients
    2 large tomatoes
    1 can flaked tuna fish
    3 Tbsp. margarine
    1 tsp. capers
    2 spring onions, chopped
    olives
    salt
Preparation
    Blanch tomatoes in boiling water.
    Drain, sprinkle with cold water, then peel.
    Cut into halves and salt to taste.
    Place tomato halves on a sieve to drain.
    Mix tuna, margarine, chopped capers and spring onions in a bowl.
    Fill tomato halves with mixture.
    Top with pitted olive.
    Serve a tomato half per person on a bed of lettuce.
    Add salt as desired.
    Serves 4.
