Confetti Rice - cooking recipe

Ingredients
    2 c. tomato juice
    1 c. frozen mixed vegetables, broken apart
    1/2 c. instant rice
    1/8 tsp. pepper
Preparation
    Combine tomato juice and mixed vegetables in medium saucepan. Bring to a boil.
    Stir in rice and pepper.
    Cover, turn off heat and allow to stand 6 minutes.
    Fluff with fork.
    Makes 4 servings.
