Ingredients

4 c. milk
1/4 tsp. salt
1/2 c. rice (long grain)
1/2 c. raisins
1 tsp. vanilla
1 tsp. nutmeg
1 c. cream
2 eggs, well beaten
1/2 c. sugar
Preparation

Put milk and salt into a saucepan and when warmed, add rice. Bring to a quick boil and then allow to simmer for 15 minutes. Stir occasionally.
Add the raisins and let it all simmer for 5 minutes longer.
Stir in 1/4 cup of the cream and simmer for 3 more minutes, stirring constantly.
Combine the frothy beaten eggs in a mixing bowl with the sugar, vanilla and rest of the cream. Blend well and stir in a tablespoon of the hot rice mixture.
Dump the contents of the mixing bowl into the saucepan and simmer until it thickens.
Serve cold.
