Cowboy Caviar - cooking recipe

Ingredients
    1 15-oz can black-eyed peas, rinsed and drained
    1/4 cup thinly sliced green onions (2)
    1/4 cup finely chopped red sweet pepper
    2 cloves garlic, minced
    2 tbsp cooking oil
    2 tbsp cider vinegar
    1-2 fresh jalapeno peppers, seeded and chopped
    1/4 tsp cracked black pepper
    Dash salt
Preparation
    In a bowl, combine all ingredients and mix well. Cover and chill overnight.
