Mom Brinkley'S Carrot Cake - cooking recipe

Ingredients
    2 c. cake flour or all-purpose flour
    2 c. sugar
    2 tsp. soda
    2 tsp. cinnamon
    1 tsp. salt
    4 eggs
    1 1/4 c. cooking oil
    2 c. grated carrots
    1 (8 oz.) pkg. cream cheese
    1 stick butter, unsalted
    1 box confectioners sugar
    1 c. pecans, chopped fine
Preparation
    Mix eggs, oil and carrots.
    Add to dry sifted ingredients. Mix thoroughly.
    Makes 2 thick or 3 medium layers. Bake at 350\u00b0 for 25 minutes.
    Yields 3 layers.
