Irish Cinnamon Potatoes - cooking recipe
Ingredients

1/3 c. soft butter
1/3 c. light corn syrup
1/2 tsp. salt
1 lb. sifted 10x sugar
1 c. shredded coconut
Preparation

Beat butter or margarine with corn syrup until blended, then work in the remaining ingredients and knead well.
Pinch off pieces just a bit smaller than walnuts and roll them between the palm of your hands.
With your thumb, flatten one side slightly, then make a few dents with a toothpick so the balls resemble little potato eyes.
Sprinkle a platter or piece of wax paper with cinnamon and roll potatoes until coated.
Be sure to cover dish with plastic wrap to minimize drying out.
Makes about 1 pound of candy.
