Sauce Piquant - cooking recipe

Ingredients
    6 to 8 onions
    6 cloves garlic, chopped
    2 large bell peppers, chopped
    2 pieces celery, chopped
    8 Tbsp. cooking oil
    2 (15 oz.) cans tomato sauce
    1 can Ro-Tel tomatoes (red and black)
    salt and pepper to taste
    4 lb. shrimp, oysters or chicken
Preparation
    Mix and cook the first five ingredients.
    Cook until transparent.
    Then add remaining ingredients, except meat.
    Simmer 1 1/2 hours.
    Add shrimp, oysters, chicken, etc., individually or combinations.
    Don't thin sauce unless necessary.
    Adjust seasonings to taste.
    Cook until done, stirring often.
    Serve over rice.
