Ingredients

2 c. all-purpose flour
1/4 c. light brown sugar
1 1/2 tsp. baking soda
1/2 tsp. salt
1/2 tsp. ground cinnamon
3 eggs
2 c. nonfat buttermilk
8 Tbsp. melted cooled butter
1 tsp. vanilla
Preparation

Sift together first 5 ingredients. Separate eggs. Add buttermilk, butter and vanilla. Stir with rubber spatula. Whip whites until fluffy. Incorporate. Pour in dry ingredients. Pour 1/4 cup batter into each section belgium waffle maker. Cook 5 to 7 minutes.
