Boston Baked Beans - cooking recipe
Ingredients

2 c. dried pea beans
6 c. water
1/4 lb. fat bacon
1 chopped onion
1 tsp. salt
1/8 tsp. pepper
1/2 c. molasses
1 tsp. dry mustard
1 minced garlic clove
2 Tbsp. brown sugar
Preparation

Cover beans with water.
Boil for 5 minutes.
Cover and let stand for 1 hour.
Simmer until tender.
Add water during cooking if necessary.
Drain beans but save cooking water.
Place beans, onion, salt, pepper, molasses, dry mustard, garlic and brown sugar in Dutch oven.
Mix gently with 2 cups of bean liquid until all ingredients are blended.
Top with slices of bacon.
Cover and bake for 3 hours.
