Potato-Leek Soup - cooking recipe

Ingredients
    2 tsp. olive oil
    1 c. diced onions
    2 c. diced potatoes
    2 c. chopped leeks
    1 tsp. salt
    3 c. water or chicken broth
    1 can evaporated milk
Preparation
    In a large pot saute onions in oil
    until clear.
    Add water, salt, potatoes and leeks.
    Cover and simmer for 25 minutes or until potatoes are soft.
    Puree in blender and return to pot.
    Add milk. Heat for 5 minutes until hot.
    Serve with croutons and fresh ground black pepper.
