Garlic-Parsley Potatoes - cooking recipe
Ingredients

3 lb. medium-size red potatoes (unpeeled and sliced)
1/4 c. olive oil
8 cloves garlic, minced
1 tsp. salt
1/2 tsp. freshly ground pepper
2 Tbsp. chopped fresh parsley, divided
Preparation

Combine first 5 ingredients; toss to coat well.
Layer half of mixture in a lightly greased 12 x 8 x 2-inch dish.
Sprinkle with half of parsley.
Layer remaining mixture.
Cover and bake at 350\u00b0 for 45 minutes or until tender.
Uncover; sprinkle with remaining parsley.
Yield:
6 to 8 servings.
