Rita'S Chicken And Rice - cooking recipe

Ingredients
    1 fryer, cut up in eighths
    1 Tbsp. lemon juice
    soy sauce
    seasoned salt
    1/4 c. vegetable oil
    1 clove garlic, minced
    1 medium onion, chopped
    1 large tomato, cut in chunks or 10 cherry tomatoes, halved
    1 bay leaf
    1/4 tsp. thyme
    1/2 c. white wine
    1 (8 oz.) can tomato sauce
    1 c. uncooked rice
    1 c. sliced olives
    1 c. cooked ham, pork or sausage pieces (sausage is best)
    pimentos and sliced hard-boiled eggs (for garnish)
Preparation
    Season chicken pieces with lemon juice. Sprinkle liberally with soy sauce.
    Add seasoned salt to taste. Cover and refrigerate 5 to 6 hours or overnight.
