Salmon Croquettes - cooking recipe

Ingredients
    1 can pink salmon
    2 eggs
    1/4 c. chopped onion
    2 c. cracker crumbs
    salt and pepper to taste
    seasoning salt
    1 tsp. lemon juice
Preparation
    In a large bowl, place salmon, removing all visible bones.
    Add 1 egg, onion and 1/2 cup of cracker crumbs; mix well.
    Add 1 egg, 1/2 cup cracker crumbs, lemon juice and seasoning, mixing well. Place remaining cup of cracker crumbs in a small bowl.
    Shape salmon mixture into oblong shaped patty 1/2-inch thick; roll in cracker crumbs, coating each patty well.
    Deep fry in shortening until golden brown.
