Chinese Chicken With Cashews - cooking recipe

Ingredients
    3 Tbsp. oil
    2 chicken breasts (1 1/4 to 1 1/2 lb.), boned, skinned and cut in 3/4-inch cubes
    2 cloves minced garlic
    3 Tbsp. soy sauce
    1 1/2 Tbsp. sherry
    1 1/2 Tbsp. cornstarch
    1/2 tsp. minced fresh ginger or 1/4 tsp. dried
    1/2 tsp. salt
    1 c. chicken broth
    1 green pepper, cut in 3/4-inch cubes
    2/3 c. cashew halves
Preparation
    Pour oil into large microwave cooking container with a cover. Combine all other ingredients, except cornstarch, broth, green pepper and cashews.
    Heat oil, alone, for 1 minute.
    Add chicken mix and cover and cook for 4 minutes, stirring twice.
    Add green pepper and cashews.
    Cover and cook for 6 minutes, stirring twice. Add cornstarch, mixed in broth, and cook 1 1/2 minutes longer, stirring twice.
    Let stand, covered, 2 or more minutes.
    Serve with rice.
