Cheese 'N Chili Rice - cooking recipe
Ingredients

1/4 c. butter
1 c. chopped onion
4 c. freshly cooked white rice
2 c. sour cream
1 c. cream-style cottage cheese
1/2 tsp. salt
1/8 tsp. pepper
1 (4.5 oz.) can green chilies
2 c. grated cheese (Colby or Cheddar)
Preparation

Preheat oven to 375\u00b0.
Lightly grease a 12 x 8 x 2-inch pan. Saute onion in butter and remove from heat.
Stir in hot rice, sour cream, cottage cheese, salt and pepper.
Toss lightly to mix well.
Layer half the rice mixture in bottom; then spread chilies over that layer, then 1/2 the grated cheese.
Layer other half of rice and top with remaining cheese.
Bake 25 minutes.
Serves 8.
