French Toast With Maple-Pecan Butter - cooking recipe

Ingredients
    8 slices raisin bread
    `3 eggs
    2 egg yolks
    2 c. vanilla ice cream, melted
    1 Tbsp. brandy
    1/2 tsp. vanilla extract
    pinch of nutmeg
    pinch of cinnamon
    pinch of salt
    3 Tbsp. clarified butter
Preparation
    Preheat oven to 350\u00b0.
    Let bread rest overnight and get stale. In a large bowl, whisk ingredients, except clarified butter. Place egg mixture in a flat pan and add bread slices.
    Let bread soak up mixture, turning once.
    Heat a 10-inch saute pan over moderate heat and add clarified butter.
    Place 4 slices of bread, slightly overlapping, in pan.
    Spread Apple Compote (recipe follows) over bread and add remaining pieces.
    Press down lightly. Cook one minute, then flip.
    Place in oven and bake 8 to 10 minutes.
    Remove and serve.
