Pumpkin Roll - cooking recipe

Ingredients
    3 eggs
    1 c. sugar
    2/3 c. pumpkin
    1 tsp. lemon juice
    3/4 c. all-purpose flour
    1 tsp. baking powder
    3 tsp. pumpkin spice
    1/2 tsp. salt
    1 c. chopped pecans or walnuts
Preparation
    Beat eggs on high speed 5 minutes.
    Ad sugar, then pumpkin and lemon juice.
    Sift all dry ingredients.
    Fold into egg mixture. Add nuts.
    Place a sheet of tinfoil on 15 x 10-inch cookie sheet. Grease foil with cooking oil.
    Pour and spread mixture on foil and bake 15 minutes at 350\u00b0.
    Remove from oven and while still hot, powder the front side of mixture with powdered sugar and turn over on a tea towel.
    Pull off tinfoil and powder that side also. Start at one end and roll both towel and dough up.
    Let cool for one hour, then unroll.
