Zucchini Beef Casserole - cooking recipe

Ingredients
    1 lb. ground beef
    1 onion
    2 c. cottage cheese
    1/2 tsp. oregano
    1 (10 1/2 oz.) can cream of mushroom soup, undiluted
    1 c. sharp Cheddar cheese, shredded
    4 c. sliced zucchini (peeling optional)
    1 c. uncooked instant rice
    1/2 tsp. salt
    1/8 tsp. pepper
    1 Tbsp. oil
Preparation
    Brown meat and onion in oil.
    Add rice and seasoning.
    Stir a few minutes. Drain off excess grease.
    Layer in a 9 x 13-inch casserole half the sliced zucchini, all of the meat mixture, cottage cheese, remainder of zucchini, soup and grated cheese. Bake at 350\u00b0 for 40 minutes or longer.
