Fried Rice - cooking recipe

Ingredients
    1/2 c. Cooked chicken, pork or ham, finely chopped
    2 Tbsp. Onion, chopped
    4 oz. can Mushrooms, drained
    2 Tbsp. Oil
    3 c. Rice, cooked and cooled
    1/4 c. Soy sauce
    2 Eggs, well beaten
    1 Tbsp. Parsley, chopped
    1/8 tsp. Pepper
Preparation
    In a medium skillet, cook the chicken, onion and mushrooms in the oil until tender, add rice and soy sauce. Cook over a low heat for 5 minutes, stirring occassionally with a fork. Add egg, parsley and pepper. Cook for a further 5 minutes stirring constantly. Serves 5-6.
