Roasted Lemon-Thyme Potatoes - cooking recipe
Ingredients

1 Tbsp. olive or vegetable oil
2 Tbsp. lemon juice
1/2 tsp. thyme leaves
5 or 6 small new potatoes, cut into fourths
Preparation

Heat oven to 450\u00b0.
Spray square 8 x 8 x 2-inch pan with nonstick cooking spray.
Mix oil, lemon juice and thyme in medium bowl; toss with potatoes.
Place potatoes in pan.
Sprinkle with salt and pepper, if desired. Bake 20 minutes; turn potatoes. Bake about 15 minutes longer or until potatoes are tender and light brown.
Makes 2 servings.
