Diabetic Coconut Pie - cooking recipe

Ingredients
    2 c. 2% milk
    1/4 c. plus 1 Tbsp. cornstarch
    7 packets Equal sweetener
    1 Tbsp. oleo or butter
    3 eggs
    1/2 c. coconut
    1 tsp. vanilla
    1 baked pie crust
Preparation
    Let milk come to boil.
    Add cornstarch to 1/4 cup milk and 3 egg yolks (beaten).
    Thicken milk; take off stove and add coconut, oleo, vanilla and sweetener.
    Pour into baked pie shell.
    Make meringue with 1 package sweetener and put in oven for about 20 minutes.
