Beef Enchiladas - cooking recipe

Ingredients
    1 lb. extra lean ground beef
    1 small onion, diced
    1 (4 oz.) can diced green chilies
    1/2 tsp. black pepper
    1 c. shredded cheese, divided
    8 (6-inch) corn tortillas
    1 (10 oz.) can enchilada sauce
Preparation
    Preheat oven to 350\u00b0.
    In large skillet cook beef and onions until brown.
    Drain off fat.
    Add diced chilies and pepper. Divide beef mixture evenly on each tortilla.
    Using one half cup shredded cheese, sprinkle a small amount of enchilada sauce in bottom of 13 x 9-inch baking pan.
    Roll each tortilla in and place in pan.
    Cover with remaining cheese and sauce.
    Bake 15 minutes or until hot and cheese is melted.
    Yields 4 portions (2 enchiladas).
