Ambrosia Dessert - cooking recipe

Ingredients
    2 c. graham cracker crumbs
    1/2 stick margarine, melted
    1 (8 oz.) can crushed pineapple
    2 c. boiling water
    2 pkg. orange Jell-O
    1 3/4 c. thawed Cool Whip
    1 can mandarin oranges, drained
    1 1/2 c. mini marshmallows
    1/2 c. coconut (optional)
Preparation
    Drain pineapple, reserving liquid. Add cold water to liquid to measure 1 cup. Stir boiling water into Jell-O in a large bowl for 2 minutes or until completely dissolved.
    Stir in measured liquid. Refrigerate 1 1/4 hours or until slightly thickened (consistency of beaten egg whites). Stir in whipped topping with wire whisk until smooth.
    Refrigerate 10 minutes or until mixture will mound. Stir in oranges, pineapple, marshmallows and coconut.
    Pour over graham cracker mix.
