Jambalaya - cooking recipe
Ingredients

2 lb. smoked sausage
4 breasts or 1 whole fryer
3 c. rice (raw)
3 to 4 green onions, chopped
small bell pepper, chopped
1 to 2 celery stalks, chopped
1 tsp. salt (to every c. rice)
Preparation

Slice sausage thin and cook until brown. Remove. Place chicken in same skillet and cook until done. Remove. Saute vegetables in oil and drain. Return to pan. Add vegetables and 1 1/2 cups water for every cup of rice. Add salt. Bring to boil. Add meat. Bring to boil. Add rice and cook slowly until it is dry. Stir occasionally.
