Rhubarb Muffins - cooking recipe

Ingredients
    1 c. finely diced rhubarb
    1/4 c. sugar
    2 c. flour
    1/2 c. sugar
    1 tsp. soda
    1/2 tsp. salt
    1 egg
    1/2 c. buttermilk
    1/4 c. oil
    1 tsp. vanilla
Preparation
    Combine rhubarb and 1/4 cup sugar.
    Let stand 1 hour.
    Mix together flour, sugar, soda and salt.
    Beat together egg, buttermilk, oil and vanilla. Add to dry ingredients.
    Mix just until moist.
    Add rhubarb mixture.
