Wild Duck - cooking recipe

Ingredients
    1/4 medium apple
    1/4 small onion
    1 small link pork sausage (not smoked)
    1/2 c. Burgundy wine
    1 small piece salt pork
    salt and pepper
    celery leaves
Preparation
    Salt and pepper duck.
    Stuff with apple, onion, sausage (with casing removed) and celery leaves.
    Add a little wine to the cavity.
    Place in an iron pot.
    Pour over rest of wine.
    Place salt pork on breast of duck.
    Cover.
    Roast at 325\u00b0 for about 3 hours. Serve with orange sauce.
