New York Deli Style Cheese Cake - cooking recipe

Ingredients
    4 (8 oz.) pkg. cream cheese
    2 c. sugar
    8 medium eggs or 7 large eggs
    32 oz. sour cream
    2 to 3 tsp. vanilla
    1 tsp. lemon juice
    1 1/2 c. ground cinnamon graham crackers
Preparation
    Preheat oven to 350\u00b0.
    Have all above ingredients at room temperature.
    Cream the cheese.
    Add sugar slowly.
    Add eggs, one at a time.
    Mix well.
    Add sour cream, bit by bit, followed by juice and vanilla.
    Grease and line spring-form pan with graham cracker mixture.
    (For crunchier crust, add 2 tablespoons melted butter.)
    Bake for 10 minutes.
    Cool, then add cheese mixture for baking.
    Bake for 1 hour, then turn oven off.
    Leave cake in oven for 1 1/2 hours with oven door cracked open.
    Open door all the way and leave cake in for 1/2 hour longer.
    (Slow cooling is the secret.)
