Zucchini Bread - cooking recipe

Ingredients
    3 eggs
    1 1/2 c. sugar
    1 c. vegetable oil
    2 c. peeled, grated raw zucchini
    3 tsp. vanilla
    3 c. flour (2 c. white, 1 c. wheat)
    1 tsp. salt
    1 tsp. baking soda
    1/4 tsp. baking powder
    3 tsp. ground cinnamon
    1 tsp. nutmeg
    1 c. chopped nuts (optional)
Preparation
    Beat eggs until light and foamy.
    Add sugar, oil, zucchini and vanilla; mix lightly but well.
    Combine flour, salt, soda, baking powder, cinnamon and nutmeg.
    Add dry ingredients to egg-zucchini mixture and stir until well blended.
    Add nuts, if desired.
    Pour into 2 (9 x 5 x 3-inch) loaf pans.
    Bake at 350\u00b0 for 1 hour.
    Cool on a rack.
