Bacalhau A Bras Number 1 - cooking recipe
Ingredients

1/4 c. onion, cut crescent shaped
1/4 c. shredded codfish (raw)
1/2 c. potatoes, cut into long thin strips
3 eggs, slightly beaten
2 Tbsp. chopped parsley
1/2 clove garlic, chopped very fine
1/2 small bay leaf
Preparation

Shred codfish, after removing skin and bones.
Codfish should be soaked prior to this for about 1/2 hour so it loses its salt. Remove from water and press until dry.
For best results, water should be changed several times.
Cut the potatoes into long thin strips and fry until transparent and lightly browned.
Do not allow potatoes to crisp.
Remove from pan.
Cut onion into crescent shape slices (thin) and saute until lightly browned.
Add shredded codfish and cook for 5 minutes.
Add salt, pepper, garlic and bay leaf.
Mix well then add the parsley and potatoes.
Add beaten eggs and stir until eggs are cooked.
