Lemon Meringue Pie - cooking recipe
Ingredients

1/2 c. plus 1 Tbsp. cornstarch
1 1/2 c. sugar
pinch of salt
1 3/4 c. hot water
4 eggs, separated
1 1/2 Tbsp. unsalted butter or margarine
2 tsp. grated lemon rind
1/2 c. lemon juice (3 large lemons)
10-inch pie shell
dash of salt
1/4 tsp. cream of tartar
1/2 c. sugar
Preparation

Combine cornstarch, 1 1/2 cups sugar and pinch of salt in pan; stir to blend well.
Gradually stir in hot water until well mixed. Cook over medium heat, stirring constantly, until mixture thickens and bubbles.
Lower heat and cook 1 minute longer.
Beat egg yolks slightly in small bowl.
Stir in about 1/2 cup of the hot mixture. Stir into cornstarch mixture in pan.
Cook, stirring constantly, 2 minutes.
Remove from heat.
Stir in butter and lemon rind until butter is melted.
Gradually stir in lemon juice.
Cool 5 minutes. Pour into pie shell.
