Ingredients
    3 c. carrots, sliced and cooked
    1/4 c. Cheddar cheese, grated
    1 medium onion, diced
    3/4 c. Ritz crackers, crushed
    3 Tbsp. butter, melted
    salt and pepper
    3/4 c. carrot juice
Preparation
    Mix all ingredients in casserole; pour carrot juice on top and heat in oven for 20 minutes at 375\u00b0.
    Serves 6 to 8.
