Lentil Soup - cooking recipe

Ingredients
    2 c. lentils
    8 c. water
    1/2 c. chopped onion
    2 cloves minced garlic
    1/2 c. chopped carrots
    1/2 c. chopped celery
    1/4 c. olive oil
    1 tsp. salt
    1/2 tsp. pepper
    3 Tbsp. tomato paste
    2 bay leaves
    1/2 tsp. oregano
    3 Tbsp. wine vinegar
    ham hock (optional)
Preparation
    Soak lentils overnight in 2 cups water.
    Saute onion, garlic, celery and carrots in oil.
    Add drained lentils, 6 cups of water, salt, pepper, tomato paste, bay leaves and oregano.
    Bring to a boil.
    Cook until lentils are soft.
    Remove bay leaves.
    Add vinegar.
