Chicken Lucy - cooking recipe

Ingredients
    1 lb. chicken cutlet
    1 lb. fresh mushrooms, sliced
    1 lb. shredded Mozzarella cheese
    2 large onions
    1 large can salsa-style tomatoes
    4 eggs, well beaten
    3 c. bread crumbs
    1 c. olive oil
Preparation
    Cut chicken into bite-size pieces and soak in eggs for 1/2 hour.
    Bread chicken and fry in oil until golden brown.
    Drain and set aside.
    In large casserole, add mushrooms, sliced onions, cheese and tomatoes.
    Mix well, then add chicken.
    Bake at 350\u00b0 until onions are soft and serve with vegetables, rice or potatoes.
