Morning Glory Muffins - cooking recipe
Ingredients

1 1/4 c. sugar
2 1/4 c. flour
1 Tbsp. cinnamon
2 tsp. baking soda
1/2 tsp. salt
1/2 c. shredded coconut (optional)
1/2 c. raisins
2 c. grated carrots
1 apple, shredded
8 oz. crushed pineapple, drained
1/2 c. pecans or walnuts (optional)
3 eggs or 6 egg whites or 3/4 c. egg substitute
1 c. vegetable oil or 1/2 c. oil plus 1/2 c. applesauce
1 tsp. vanilla
Preparation

Dry Mix:
Sift together the flour, sugar, cinnamon, baking soda and salt into a large bowl.
Add the fruit, carrots and nuts and stir to combine.
