Eggplant Fritters - cooking recipe

Ingredients
    1 medium eggplant
    salt and pepper to taste
    1 Tbsp. butter
    1 beaten egg
    2 to 3 Tbsp. flour
Preparation
    Put eggplant into cold, salted water (whole).
    Boil until it can be pierced with a fork.
    Peel, mash and season with salt, pepper and butter.
    Add egg and flour.
    Mix well.
    Drop by spoonfuls onto hot, greased griddle.
