Ingredients

1/2 lb. sweet chocolate
6 large eggs
3 Tbsp. water
2 c. heavy cream
6 Tbsp. sugar
1/4 c. Amaretto
whipped cream for garnish
grated chocolate for garnish
Preparation

Cut chocolate into 1/2 inch pieces and place in a saucepan. Place pan in almost boiling water and cover.
Let chocolate melt over lowered heat.
Put yolks in a heavy saucepan and add the 3 tablespoons water.
Place saucepan over very low heat while beating vigorously and constantly with a wire whisk, being careful not to burn.
When yolks start to thicken, add Amaretto.
Continue beating until sauce is consistency of a Hollandaise sauce.
Remove from heat.
