Waldorf Chicken Salad - cooking recipe

Ingredients
    1 (20 oz.) can pineapple tidbits
    2 whole chicken breasts, cooked and chopped
    2 medium apples, peeled and diced
    1 c. sliced celery
    1/2 c. green onion
    3/4 c. light mayo
    1/2 tsp. lemon peel
    1 c. grapes, sliced
    1/2 c. pecans
    1/2 tsp. vanilla
    1 Tbsp. poppy seed
Preparation
    Strain pineapple.
    Reserve 2 tablespoons of the juice.
    In a large bowl, combine chicken, pineapple, apples, grapes, celery, nuts and onion.
    In a small bowl, combine mayonnaise, juice, poppy seed, vanilla and lemon peel.
    Mix well and pour over chicken mixture.
    Serve over crisp greens.
    Keep refrigerated.
    Makes 4 to 6 servings.
