Oven Spanish Rice - cooking recipe

Ingredients
    1/2 c. chopped onion
    1/2 c. chopped green pepper
    2 Tbsp. shortening or salad oil
    1 envelope spaghetti sauce mix
    2 (1 lb.) cans tomatoes (4 c.)
    1 c. uncooked long grain rice
    1/2 tsp. salt
    1/2 c. water
    2 oz. sharp process American cheese, shredded (1/2 c.)
Preparation
    In saucepan, cook onion and green pepper in shortening or salad oil until tender, but not brown; stir in spaghetti sauce mix, tomatoes, uncooked rice, salt and water.
    Simmer 10 minutes, stirring frequently.
    Pour into a greased 1 1/2-quart casserole; cover and bake in moderate oven at 350\u00b0 for 30 minutes or until rice is done.
    Sprinkle with shredded sharp cheese.
    Makes 4 to 6 servings.
