Potato Skin Appetizers - cooking recipe

Ingredients
    8 medium potatoes, baked
    grated Cheddar cheese
    1 c. sour cream
    salt and pepper to taste
    melted butter
    bacon, cooked and crumbled
    2 Tbsp. minced chives or green onions
Preparation
    Cut baked potatoes in half.
    Scoop out insides leaving 1/8-inch in shell.
    Brush with melted butter and sprinkle with grated cheese and bacon.
    Place in 500\u00b0 oven until cheese is melted and potato skins are crisp (about 10 to 12 minutes). Combine sour cream with chives and salt and pepper to taste. Serve with potato skins.
    Serves 8.
